Easy Arroz con Pollo

Zucchini - 1
Tomatoes - 2 large
Garlic - 1 tablespoon
Onion - ½ large or 1 small
Oil - 1 tablespoon
Salt - ½ teaspoon
Chili Powder - 2 teaspoons
Cumin - 1 teaspoon
Chicken - 8 wings or 4 breasts
Long grain rice - 1 cup
Water - 2 cups
Serves 4

  1. Combine water and rice in a baking dish. Cover tightly and bake at 400 degrees for 30 minutes
While the rice is cooking:
  1. Chop and cook garlic and onions over low heat for about 5 minutes
  2. Add chicken pieces and sear each side for 1-2 minutes
  3. Remove chicken and add tomatoes, zucchini, and spices. Cook until tomatoes are broken down and saucy. You may need to add a little water or chicken stock
  4. Return chicken to pan and cover, cook over medium low heat for 15-20 minutes, until chicken is 165 degrees in the middle
  5. Serve over rice with some fresh cilantro
